I am using DAVID5 version and I am testing the scan using two cameras https://aliexpress.ru/item/32864044502. ... 1595001424.

The default resolution of this camera is 2592X1944, but I am using it by setting it to 2048X1536 according to my computer performance.

However, every time you run DAVID, you need to change the camera's default resolution of 2592X1944 to 2048X1536 and run it with two cameras...

And like a photo, I use it by adjusting the properties of the camera, but this is also set as the default every time I run DAVID, so I change it every time.

Can I save the camera's default resolution and properties as the values ​​I set?

No, you cannot save the resolution settings.
This is a limitation of both camera drivers and a "feature" of David / HP3DScan.
P.S. In older versions of David (<4), it was easier to change the camera resolution (but it was not saved there either) ... and only one camera was supported)
